Introduction

Healthy, low fat, low carb, high in protien and oh sooooo good! This dish is easy to make and is great to keep in the fridge at home or at work for a quick lunch or snack.

Healthy, low fat, low carb, high in protien and oh sooooo good! This dish is easy to make and is great to keep in the fridge at home or at work for a quick lunch or snack.

Number of Servings: 2

Ingredients

    6 oz Shelled Prawns
    2 cups Fat Free Chicken Broth
    1 bunch of Bok Choy Chopped
    2 tsp fresh grated Ginger
    1 tsp fresh chopped Garlic
    1/2 cup sliced Green Onions
    1 medium square cut Bell Pepper
    1 cup sliced Mushrooms
    1 tbsp Fish Sauce
    Juice from 1 fresh squeezed Lemon

Directions

---Mix all ingredients into medium pot except for the prawns and bring to slow boil.
---Turn the heat low and allow to simmer until the bok choy has wilted and is tender 5 to 7 minutes.
---While the stock is simmering, clean and shell the prawns if not already done.
---Add the prawns once the bok choy has reached an acceptable tenderness and cook until pink, usually about 5 minutes.
---Be carful not to over cook the prawns or they get too chewy.
