Ingredients

    Ingredients:


    Water, tap, 12 cup
    Chicken Drumstick, 2 unit
    Onions, raw, 1 large
    Ginger Root, 5 slices (1" dia)
    Ginger, ground, 1 tbsp
    Pepper, black, 1 tsp
    Chicken Broth, 1 cup (8 fl oz)
    *Bok Choy, raw-shreaded, 1 cup
    Carrots, raw, .25 cup, chopped
    Celery, raw, 1 cup, diced
    *Thai Kitchen Lemongrass & Ginger Jasmine Rice, 1 cup
    Cilantro, raw, 3 tbsp
    mushrooms (5 sliced)

Directions

In a large pot place water and chicken , and broth carrots and celery .. and bring toa boil. Take the ( peeled)onion and score top..peel ginger root.. place both under broiler for 4 min on low.. until aromatic.. take out and slice onion in quarters.. and slice ginger.. place in pot with chicken.
Take one cup of Jasmine rice and rinse 3 times to remove excess starch.. and add to pot. Let all come to a boil then turn down to simmer for 2 hours..The last 10 min.. I add the bok choy and cilantro .. and some fresh mushrooms... Serves 8 2 cup servings..
