IntroductionA zippy soup for a cold winter's day. A zippy soup for a cold winter's day.
1/4 C onions, chopped
1 clove garlic, chopped
1 T olive oil
1 can black beans, rinsed and drained
1 beef boullion cube or 1 can beef broth
1/4 C salsa
1 C spinach, chopped
Saute onions and garlic until golden.
Add black beans. Smash the black beans with a potato masher. It's okay if they're not completely smashed.
Add boullion and one can (roughly 15 oz.) of water or just add beef broth (you could use vegetable or chicken broth, I suppose).
Add salsa. Add more or less, according to how spicy you like things.
Bring to a boil over medium or medium-high heat. Simmer for 20-30 minutes until soup has thickened and reduced a bit.
Add spinach. Cook for another five or ten minutes.
Frozen ingredients can be substituted for fresh.
Put in soup bowls and sprinkle with a little cheese, roughly a tablespoon. Serve with sour cream, tortilla chips, or your favorite Mexican condiments.
Makes 2 hearty servings.
