Broccoli Soup

Introduction

Simple quick low fat soup Simple quick low fat soup
Number of Servings: 4

Ingredients

    1c chicken broth
    3c chopped broccoli
    1 clove garlic
    2 tsp grated ginger
    1c skim milk
    1 tsp soy sauce
    1/4c finely chopped red onion

Directions

In large sauce pan bring chicken broth to a boil

Add broccoli, ginger, garlic. Reduce heat to low and simmer about 5 min. Remove from heat

Cool slightly and puree in food processor or blender

Add milk and heat up over low heat

Serve sprinkled with red onion

Serves 4 - approx 1cup per serving
