Introduction

Wild mushrooms and chicken make a fantastic pair. Look for wild mushrooms next to the regular button mushrooms at larger grocery stores. Ingredients

    1 tablespoon butter
    1/4 cup white wine
    2 tablespoon quick-cooking tapioca
    1 pound mixed wild rushrooms (such as shitake, baby portobellos, cremini, etc.)
    2 pounds skinless, boneless chicken breasts, fat trimmed, sliced horizontally to make thinner pieces
    1/2 teaspoon kosher salt
    1/2 teaspoon pepper
    4 ounces mascarpone cheese

Directions

Makes 4 servings

1. Grease the slow cooker crock with the butter (leave excess in the crock). In the slow cooker crock, stir together the wine and tapioca. Top with mushrooms and chicken pieces, and sprinkle with salt and pepper.

2. Cover and cook on LOW for 7 hours. Stir the chicken and mushrooms well to combine, then re-cover and cook 1 hour more. When done cooking, remore 1 cup of the cooking liquid and discard it. Add the mascarpone cheese to the crock and gently stir to combine.
