Chicken & Pumpkin Potato Soup

Introduction

I wanted to make one of the recipes on SP without potato, but it wasn't as creamy as I wanted so I fixed it up this way. I wanted to make one of the recipes on SP without potato, but it wasn't as creamy as I wanted so I fixed it up this way.
Number of Servings: 10

Ingredients

    6 cups vegetable broth
    3 cups skim milk
    1 lb chicken breasts, cubed
    2.5 cups pureed pumpkin/winter squash
    2 large onions, chopped
    2 small carrots
    2 potatoes
    3 cloves of garlic
    1 TBS Olive oil
    1 tsp salt
    pepper to taste

Directions

Saute onion in the oil until transparent. Add garlic. Take cooked pumpkin & mash or puree it. (Or use canned). Add the remaining ingredients, bring to a boil, and simmer for at least 45 minutes. Serve hot! Makes about 10 1 cup servings.
