Introduction

Delicious and easy, this salad combines all of my favorite sushi ingredients in one bowl! And, because it's based on a California roll, it uses fully cooked seafood. Ingredients

    Salad:
    1 cup brown rice, cooked (1/2 c dry)
    1 head butter or romaine lettuce, chopped
    8 oz. imitation crab meat or cooked shrimp, chopped
    1 English (seedless) cucumber, thinly sliced (and peeled if not organic)
    1 ripe avocado, diced
    1 carrot, grated
    3 T pickled ginger, chopped (available in the Asian section of most supermarkets)

    Dressing:
    3 T rice wine vinegar
    1 T light soy sauce
    Wasabi powder to taste (start with 1/2 t)

    Garnishes:
    1 T sesame seeds
    1 large sheet nori (seaweed), toasted and broken into small pieces


Tips

This is a great way to introduce friends and family to the taste of sushi. Add slivered sushi ginger, bits of nori (seaweed), and sesame seeds to make it even more authentic.


Directions

Combine all ingredients for dressing in a small bowl and whisk ingredients together.

Divide clean, dry and chopped lettuce among four large bowls. Top with crab meat, avocado, cucumber, carrot and ginger. Drizzle dressing over salads, then top with sesame seeds and nori.

    I make a similar salad with quinoa instead of brown rice and baked salmon instead of crab. It's really fantasic - tasty, easy to prepare, and a great way to use leftover salmon. - 11/21/08

    Exactly like California rolls - very fresh! I used 3 sheets of nori toasted over the stove, and I also toasted the sesame seeds for a nuttier flavor. You could also double up on the dressing & crab for a stronger taste. Best if eaten immediately, or it gets rather soggy. - 11/25/08

    I made this last night and loved it - a great healthy treat. I recommend toasting the sesame seeds (you can do this easily by sprinkling them on a sheet of foil and popping it in your toaster oven) for great nutty flavor. Will try again later with scallops in place of shrimp. - 11/19/08

    I made the dressing w/o wasabi & crumbled the entire pkg of imitation crabmeat/shrimp (12 oz) into the dressing to soak flavor before adding it to the salad. I omitted the rice and it was substantial, even for my husband! This will be a go-to dinner when I'm short on time and want something healthy! - 11/14/08

    Really tatses like sushi!!

    I didn't love it on romaine lettuce, will go with another when i make this great meal again. Love the fact i can make a big batch (without lettuce) and just store it for people to eat as they wish. - 9/7/09

    This was SOOOOOOOO freaking good! I just had today for lunch. I didn't have any ginger, nori, wasabi powder, or carrots but I added some thinly sliced tomato to mine. I had it with a side of miso soup... I think I'll have it again for dinner tonight! It was just so delicious! - 2/18/10

  • when we have family sushi night this is almost always how I fix mine. You can really scale back the calories if you need to by cutting the rice. Sometimes I leave it out completely. And, I use either the bagged coleslaw or brocolli slaw to replace it and add lots of satisfying crunch. - 2/25/14

  • This is fantastic. I made one batch of dressing with 1/2 tea wasabi and another with 1 1/2. Everyone was happy. It is 90 degrees out and this dish hits the spot.
