Broccoli Chicken Casserole

Introduction

A one-pan meal that's sure to please. A one-pan meal that's sure to please.
Number of Servings: 40

Ingredients

    6 c brown rice, cooked
    1.5 c each monterey, cheddar, swiss cheese
    1.5 c milk
    1 lb chicken breast, cooked and diced (can use canned)
    1 pkg frozen broccoli, thawed (10 oz.)
    1 c chopped onion
    .5 c mixed bell pepper, in strips (red and yellow work best)

Directions

Makes 40 1 cup servings

Preheat your oven to 375 degrees.

In a deep pan (I use half-size steam table liners for the depth), layer your pre-cooked rice, vegetables, cheese, cooked chicken, cheese, rice, vegetables, cheese. Pour milk over the total product so that it reaches all the way to the bottom of your pan.

Cook at 375 for 40 minutes or until cheese is golden brown and fully melted. There will be some liquid at the bottom of your pan, but it shouldn't matter.

  • The directions in this meal need to be a bit more precise. Everything came out ok except for the rice. The rice didn't get cooked all the way through. I would suggest that they cook the rice, chicken and broccoli seperately then combine them with the cheese and then bake until the cheese melts - 11/7/08
