Chilean Squash Casserole

Introduction

Chilean Squash Casserole from the Moosewood Cookbook. Chilean Squash Casserole from the Moosewood Cookbook.
Number of Servings: 4

Ingredients

    2 10oz packs of frozen squash
    Red and green pepper diced
    Onion diced
    4 cloves of garlic minced
    1/2C firm fat free plain yogurt
    1C crumbled reduced fat feta
    Salt
    Pepper
    Cayenne to taste
    1/4C Sunflower seeds to sprinkle on top

Directions

Preheat oven to 350F
Saute onions til translucent then add peppers, garlic, salt, pepper, and cayenne.
Thaw squash and add feta and yogurt.
Add pepper and onion mix to squash and mix well.
Pour into a 9" pan sprinkle with sunflower seeds and bake for 20-30 minutes.

Makes about 5 servings
