Portugese Beef Stew

Number of Servings: 8

Ingredients

    2 1/2 lb sirloin tip roast, trimmed and cubed for stew meat
    2 Tbsp olive oil
    2 C water
    1 C tomato sauce
    2 bay leaves
    2 Tbsp Vinegar
    1 tsp salt (or to your preference)
    1 tsp garlic powder
    1/2 to 1 tsp crush red pepper
    1/2 tsp ground cinnamon
    1/2 tsp ground allspice
    5 med potatoes-cubed into 1" pieces
    2 C. carrots cut into 1/2" pieces
    1/2 C Cold water
    3 Tbsp corn starch

Directions

Preheat oven to 375 degrees.
In dutch oven, heat 2 Tbsp olive oil and add meat. Brown all stew meat. Stir in next 9 ingredients.
Place dutch oven in oven and bake for 45 minutes.
After 45 minutes add carrots and potatoes-stir and bake another 45 minutes.
Combine water and cornstarch and mix well. Remove dutch oven and place on stove. Add water/cornstarch mix to thicken, stir well, return to oven for 5 minutes-remove and serve.
