Cauliflower-Bacon-Parmesan Salad

Introduction

Number of Servings: 20

Ingredients

    1 head Cauliflower, cut into bite-sized pieces
    1 cup Yellow Onion, small dice
    4 strips Bacon, small dice
    2 Tbs. Lemon Juice
    2 Tbs. Sugar
    1 cup Mayonnaise
    1 cup Parmesan, shredded
    1 head Iceberg Lettuce, 1-inch dice

Directions

Trim the Cauliflower into bite-sized pieces. The salad is excellent when made with uncooked cauliflower. If desired, the cauliflower pieces can be blanched in boiling, salted water for 2 minutes, drained, refreshed in cold water and drained.

Cook the bacon and onion together until sofetened but not crispy. Drain away the excess fat. Allow the bacon mixture to cool. Add the lemon juice, sugar, mayonnaise and parmesan cheese. Add the prepared cauliflower and mix well Cover and refrigerate overnight.
When ready to serve, add the diced iceberg lettuce.
