Granulated Sugar, 1.16 cup
Cinnamon, ground, 3 tsp
Baking Soda, 1 tsp
Baking Powder, 2 tsp
Egg substitute, liquid (Egg Beaters), .75 cup (remove)
Buttermilk, lowfat, 1 cup
Milk, 2%, .33 cup
Ricotta Cheese, part skim milk, .33 cup
*Canola Oil, 3 tbsp
Vanilla Extract, 2 tsp
Apples, fresh, 1.5 cup, quartered or chopped
Wheat germ, crude, .16 cup *Bob's Red Mill Whole Ground Flaxseed Meal, 2 Tbsp., 3 serving
Directions
In a bowl, combine the flour, 1 cup sugar, 2 teaspoons cinnamon, baking powder, baking soda and salt. In another bowl, beat the egg substitute, buttermilk, milk, ricotta cheese, oil and vanilla. Stir into dry ingredients just until moistenened. Fold in apples. Coat muffin cups with nonstick cooking spray or use paper-liners; fill three-gourths full. Combine the remaining sugar and cinnamon; sprinkle over batter. Bake at 400 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for 5 mnutes before removing from pans to wire racks.
