Sweet-Hot Onion Jam

Introduction

Excellent with grilled meats, chicken and fish. Perfect accompaniment for Beef and Pork Roasts. Can be added to brown sauce for an added punch. Excellent with grilled meats, chicken and fish. Perfect accompaniment for Beef and Pork Roasts. Can be added to brown sauce for an added punch.
Number of Servings: 100

Ingredients

    4 cups Yellow Onion, small dice
    2 cups Sugar
    1 cup Broth...Vegetable, Chicken, Beef
    1 cup White Wine Vinegar
    Pinch Red Pepper Flakes..or to taste
    2 each Bay Leaf

Directions

Place all ingredients into a heavy bottom saucepan. Bring to a boil then reduce the heat to a low simmer. Simmer uncovered allowing the liquid level to reduce by one-half, stirring occassionally. Skim off any scum that might collect. Remove the bay leaves when finished. Cool. Refrigerate in covered containers.
Makes 1.5 cups.
