Granny's Sweet Potato Crunch

Introduction

A great side dish for Thanksgiving dinner. A great side dish for Thanksgiving dinner.
Number of Servings: 6

Ingredients

    casserole part
    1 cup sugar
    3 cups mashed sweet potatoes
    1 tablespoon vanilla
    1/2 cup evaporated milk
    2 eggs beaten
    1 stick oleo

    Topping
    1 cup chopped pecans
    1/2 stick oleo
    3 tablespoons flour
    1 1/2 cup brown sugar

Directions

Makes 6 servings.

Mix all the ingredients of casserole part together, pour into a casserole dish, bake 30 minutes at 350 degrees.

While this is baking mix all the ingredients for the topping, after casserole has been baking for 30 minutes pull it out and sprinkle topping evenly over casserole and bake 30 minutes more.

  • I've made something very similar, but it goes a lot farther than 6 servings- probably makes 8 cups- and 1/2 cup is plenty-
    so 1/2 cup serving would be about 300 calories... - 11/29/09

  • Splenda could be used for both the white and brown sugars to cut the calories considerably and would be more diabetic friendly. If not for all the sugar, I would have given this a 5 star rating. - 11/8/08
