Oatmeal Banana Bread

Introduction

This recipe is from Stevia Sweet Recipes.
Stevia is a natural sweetner that does not contain sugar. This is a great recipe for people who are watching their sugar.
The original recipe called for 1/4 cup currants and 1/2 cup chopped dates. I substituted raisins for both. The original also called for 2 eggs and I substituted egg beaters.
The serving size here is a generous slice of bread, it could easily be cut in half.

Ingredients

    2 1/3 cups whole wheat pastry flour
    3/4 tsp Stevia Extract Powder
    2 1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt, optional
    1 cup rolled oats
    3/4 cup raisins
    3/4 cup water
    1 cup mashed bananas (about 3)
    1/2 cup vegetable oil
    1/2 cup egg beaters
    2 tsp vanilla extract.

Directions

Preheat oven to 350
Butter and flour a 9 x 5 inch bread pan
Stir together all dry ingredients, including stevia and raisins and set aside.
In a mixing bowl add bananas and all wet ingredients.
Add dry ingredients to the wet and stir just enough to combine.
Back for 55-60 minutes
