Paul's Perfect Orzo

Number of Servings: 6

Ingredients

    1 box (1 lb) Orzo pasta
    1/2 lb mushrooms
    1/2 lb peas, frozen
    1 whole Bell pepper
    3 Tbsp. Butter
    4 c. Low-sodium broth or water
    1 sm. bag frozen spinach

Directions

1. In a large skillet brown the box of orzo in the butter over medium heat, about 4 min.
2. Add broth or water and simmer on low for 7 min., stir occassionally.
3. While simmering slice mushrooms & bell pepper and remove seeds and stems.
4. Add mushrooms, peas, spinach, and bell pepper.
5. Simmer on low for another 7 min. or until broth/water has evaporated, stirring occassionally.

Serves: approx. 6 - 1/2 cup servins
