1 Mango, peeled and cubed (about 1 3/4 cups)
1 to 2 Jalapenos peppers, seeded and minced
1 Scallion(Green Onion), minced
2 tablespoons of Fresh Coriander(Cilantro)
2tablespoons fresh squeezed lime juice
1 Garlic Clove, peeled and minced
Salt and Pepper 2 taste
*This dish can be made with Tomatoes. Just replace the Mango with 1 3/4cup of tomatoes.

I found and made this to go with another recipie here called Chicken Salsa, substituting this easy and delicious homemade salsa to put with the chicken breast. Yummy! I have used this with eggwhites to make a beautiful omelet as well. Simple and quick, unexpected delight! Nutritious to boot! - 3/21/07
