Baked creamy, cheesey cauliflower

Introduction

Delicious, satisfying comfort food! Delicious, satisfying comfort food!
Number of Servings: 5

Ingredients

    1 large head fresh cauliflower cleaned and broken into small pieces

    1/2 cup low fat or fat free sour cream

    1/2 cup shredded fat free mozzarella cheese

    1 Tbsp. dehydrated minced onion

    1 Tbsp dehydrated minced garlic

    1 tsp. dried thyme

    Salt and pepper to taste

Directions

Preheat oven to 350.

In baking dish, mix sour cream, 1/4 of the cheese, onion, garlic and thyme.

Add cauliflower, toss to coat.

Top with remaining 1/4 cup cheese, salt and pepper.

Cover and bake 20 minutes or until cauliflower is fork tender but not mushy.

Uncover and finish baking to nicely brown the top.

There may be water left at the bottom of the dish, carefully drain off.

Makes approximately 5 3/4 cup servings.

  • Baked 11/19/08. It is a KEEPER. I made only for two. My proportions may be different, as I didn't have problem with excess moisture. If anything it was bordering on being too dry. I didn't put any cheese on until I took the foil off. - 11/19/08
