Savory "Cheesecake"

Ingredients

    1/2 cup Bread Crumbs
    1/4 cup Parmesan Cheese, grated
    4 Tbs. Butter, melted

    8 oz. Bacon, small dice
    1 med Onion, small dice
    1 Tbs Garlic, chopped
    1 tsp Thyme leaves
    1 tsp Rosemary leaves
    1 tsp Red Pepper Flakes...to taste
    24 oz Cream Cheese
    1 cup Eggs
    4 oz Cream
    8 oz. Blue Cheese Crumbles
    1/2 tsp Salt
    1 tsp Black Pepper
    1 tsp Hot Sauce

Directions

Combine the bread crumbs, parmesan cheese and melted butter. Press into the bottom of a 10-inch springform pan that has been sprayed with pan release.

In a heavy pan, cook the bacon, onion, garlic, thyme, rosemary and red pepper flakes until softened but not browned. Drain off excess fat and cool to room temperature.

In a food processor, mix the cream cheese, eggs and cream. Do this in batches if necessary.

In a large mixing bowl, combine the bacon and cream cheese mixtures. Add the blue cheese crumbles, salt, black pepper and hot sauce. Mix well.

Pour the mixture into the springform pan. Place the springform pan into a cake pan or large frying pan. Add water to the cakepan to come half-way up the springform pan. Cook in a 300F degree oven for approximately 90 minutes. Remove from the oven. Cool the "cheesecake" in the springform pan slightly at room temperature. Loosely cover with plastic film and refrigerate overnight.

Remove the rim and bottom. Allow the "cheesecake" to come to room temperature for best flavor.
