Cabbage Roll Soup

Ingredients

Ground Turkey, 1 lb raw
Onions, raw, 1/2 cup, chopped
Cabbage, fresh, 3 cup, chopped
Carrots, raw, 1 cup, slices
Celery, raw, 1/2 cup, sliced
Del Monte Diced Tomatoes, No Salt Added, 3.5 cup (two 14 oz. cans, undrained)
Beef broth, 6 cups (can substitute two 10.5 cans of beef consomme and 3.5 cups water)
Oregano, ground, 1/2 tsp
Pepper, black, 1/2 tsp
Dill weed, dried, 1/2 tsp
Brown Rice, medium grain, 1/2 cup
Salt to taste, if desired
Directions
1. Brown meat in large pan over high heat; drain well.
2. Add rest of ingredients, except rice.
3. Bring to boil; turn to simmer, cover, and cook about 90 minutes.
4. Add rice and cook for another 40-45 minutes.
You can also make this in a slow cooker. Brown the meat, add it and all but the rice to the slow cooker, cover and cook on low for 8 hours. Then turn to high, stir in the rice, and cook an additional 30 minutes.
