Spiced Skirt Steak

Introduction

Excellent sliced thin and served over a salad. It cooks very quickly. Use the pretenderized skirt steak, and be sure to use ground spices, not the whole seeds.

The meat can be prepared ahead of time and frozen until ready to fix.

Ingredients

    1 1/2 tsp Paprika
    1 1/2 tsp. Cumin
    1 1/2 tsp. ground coriander
    salt & pepper to taste

    1 1/2 lb. skirt steak

Directions

Combine all spices and rub over all surfaces of the steak.

Cook over the grill or under the broiler.
