    2 slices cucumber
    2 slices canned beets
    2 black olives
    1 slice pineapple
    1 wedge tomato
    2 Tbsp. shredded carrots
    .33 cup cottage cheese
    .25 cup grated colby jack cheese
    .50 cup imitation crab
    1 hard boiled egg, sliced
    1 lemon wedge

  • I would pass on the cheese and olives, but add 4 to 6 shelled, cooked shrimp and 1/4 cup of Heinz Seafood Cocktail Sauce
    You could mix the cocktail sauce, lemon juice and cottage cheese in a blender until smooth and use it as a dressing.

    I'm not sure. I was shocked when I saw that too. It might be the olives & the seafood which would both be high in sodium. I didn't make up this recipe. It is a salad that I frequently get in the cafeteria at our temple. I just wrote down the ingredients, guessed the amounts, and looked them up.
