Sweet Potato Cubes

Introduction

My sis made me this while i was visiting and they were so delicious and low cal and better than the old fashion calorie laden, overly sweetened version! This requires no sugar or salt where you get to enjoy the natural sweetness of the sweet potato. Hope you try it and enjoy! Number of Servings: 4

Ingredients

    3 sweet potatoes (cut up in cubes or whatever way you like/also amount depends on how many you are trying to feed, just double it or so on..)
    2 TBSP cinnamon (add little or less depending on taste)
    1 TBSP Nutmeg
    1/4 cup lemon juice (no sugar/this varies as well to taste, I liked the twang so I used this much...you choose)
    1/4 cup water
    1-2 TBSP Smart Balance Light Buttery Spread-melted or dabs (You can use other light margarines or spreads as well)

Directions

Add cinnamon and nutmeg to cubed sweet potatoes ( you may cut the way you like). Mix with hand or in a container sealed and shake.

In a shallow baking dish add potaoes., Then add the lemon juice on top followed by the water. Douse with melted margarine or slivers of margarine. Place in oven and bake at about 350.
If you want to bake a bit quicker you can experiment with the temps, like baking a whole potato. This temp is just a ball park estimate. Hope you try it and Enjoy!!!
