IntroductionEgg muffins with ground turkey, green chilies and non fat cheese. Egg muffins with ground turkey, green chilies and non fat cheese.
1.75 cups of egg substitute (egg beaters)
2 cans green chilies (or other jalpeno product to equal 1 cup)
1 cup non fat cheddar cheese
1 lb ground turkey
Spray 12 muffin tins with non stick spray
Divide ground turkey between the twelve muffins
add green chilis to each muffin,
Divide the cheese between the twelve muffins.
Pour egg beaters to just cover ingredients in each muffin. Add more if you like large fluffier muffins. Less makes the muffins more dense.
Place muffins in a 425 degree oven for 20 minutes.
Store in refrigerator, and reheat for 30-50 seconds in microwave.
Good finger food for commuting.
