Ingredients

    4 medium Bananas
    1 large Egg
    1 tsp. Vanilla
    1 tsp. Baking Soda
    1/2 cup Applesauce
    1/2 cup unpacked Brown Sugar
    3/4 cup White Flour
    3/4 cup Whole Wheat Flour

Directions

Preheat oven to 350 degrees fahrenheit. Smash the bananas and mix in applesauce. Mix in the egg and vanilla. In a seperate bowl, mix the flour, baking soda and salt. Combine with the wet ingredients and pour into a muffin pan (4x8 loaf pan for banana bread) that has been buttered or sprayed with non-stick spray. Bake for 20-25 minutes (1 hour for bread) and cool on a rack. Makes 12 servings.
