Oatmeal Banana Pancakes

Introduction

Ingredients

    2 cupss Old fashioned oats
    2 tbsp arrowroot powder or cornstarch
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp cinnamon
    pincof salt
    1 whole egg
    1 egg white
    (or 1/2 cup egg substitute)
    1 cup plain non-fat yogurt
    1 cup non-fat milk
    3 tbsp fruit sweetener
    1/2 tsp vanilla

Directions

in the bowl of food processer combine oatmeal, arrowroot powder or cornstarch, baking powder, baking soda, cinnamon and salt, pulse on low until oats are coarsely ground about 10 times.
In a large bowl, whisk together eggs, yogurt, milk, sweetener, and vanilla extract.
With the food processor running on low, slowly add the banana and the liquid mixture.
The mixture will be runny.
Let the mixture stand 20-30 minutes to firm.
Spray a heavy nonstick skillet or griddle with canola oil spray or nonstick cooking spray and heat over medium heat. Pour batter 1/4 cup at a time into skillet and cook until bubbles form on top of the pancake, about 2 minutes, then flip over and cook until the bottom begins to brown and pancake is cooked through, about 2 minutes more.
