Famous Chicken Salad

Introduction

This salad was inspired by a visit to Spain. It is a huge hit with everyone who has tried it. I get compliments on this meal everytime. Hearts of Palm can be found in most stores in the canned veggie isle, usually near the canned asparagus. This salad was inspired by a visit to Spain. It is a huge hit with everyone who has tried it. Number of Servings: 4

Ingredients

    2 boneless, skinless chicken breasts diced
    1 tbsp garlic powder
    4 fresh lemons
    1 head Romain Lettuce
    1 can Hearts of Palm
    1/2 yellow bell pepper
    1 cup carrots cut into matchsticks
    1 1/2 cup sliced seedless cucumber
    1 cup cherry tomatoes
    3 tbsp EVOO
    2 tbsp sea salt
    1 tbsp black pepper

Directions

Put 1 1/2 tbsp of EVOO in skillet. Heat on medium. Sprinkle garlic powder on chicken and place in pan. Halve lemons and remove seeds. Squeeze the juice of 1 1/2 lemon onto chicken, then leave empty rind in pan. Cover with lid and cook until firm and white. There will be extra fluid in the pan at this point, I prefer to take the lid off and let it cook down and brown.

While chicken is cooking, prepare the vegetables. Chop, dice or chunk as you please. Combine.

Dressing: 2 lemons, juiced. Add EVOO, sea salt and black pepper. Mix well.

When chicken has browned, mix into salad. Top with dressing and toss well.
