Introduction

This recipe makes 2 burritos. I find the soy-chorizo with the tofu products or with the sausage at the grocery store. It has all the flavor of chorizo, but it is not greasy. This recipe makes 2 burritos. I find the soy-chorizo with the tofu products or with the sausage at the grocery store. It has all the flavor of chorizo, but it is not greasy.

Ingredients

    Non-stick cook spray
    Soy Chorizo (Vegan Chorizo)
    1 large egg
    3 egg whites from large eggs
    2 six inch flour tortillas
    1 oz mozzarella cheese, part skim milk


Directions

Heat a medium skillet and spray with non stick cooking spray.
Place 2 oz of the Soy Chorizo in the skillet and crumble. Allow it to cook to desired crispiness (since soy chorizo is not raw, you can take it off whenever you want). Set aside and wipe out skillet with a paper towel.
Spray skillet and add eggs. Scramble and cook until eggs are done.
Combine soy chorizo and eggs.
Warm tortillas, sprinkle with cheese, and fill with egg mixture.
Enjoy with your favorite hot sauce.
