Introduction

You'll find variations of this delicious dish all over Latin America, the Carribean and Spain. It's simple to prepare -- even simpler if you cook with pre-cooked shrimp. 1 lb. Shrimp, cookedpeeled, and deveined
    2 - 3 tbsp. olive oil

3 tbsp. garlic, coarsely chopped or smashed
salt and pepper or Adobo to taste
    parsley or chopped cilantro

Directions

1) If using fresh shrimp, peel and devein and steam the shrimp until cooked. If using frozen, thaw out.

2) Put olive oil in pan and sauté garlic until slightly brown (be sure not to cook the garlic too quickly, as it can burn easily and can taste bitter)

3)Add shrimp, seasoning, and lime juice and cook about 8-10 minutes, allowing sauce to cook down slightly.

4) Garnish with herbs and serve over white or brown rice.

5) Traditionally, this is served over rice with fried plantains (tostones) and maybe a little bread and butter. If you're a little more health-conscious (and who isn't) it tastes just as good on top of a nice fresh salad with the rice or bread on the side.

Buen Provecho!
