Tasty Salmon Muffins

Number of Servings: 6

Ingredients

    12 ounces of salmon
    2 eggs
    2 tbsp onions
    2 tbsp green bell peppers
    2 ounces cheddar cheese, shredded
    Salt and pepper to taste
    Old Bay Poultry Seasonning

Directions

Preheat oven to 350 F.

Mix all ingredients together and divide amongst 6 well-greased muffin cups. Bake at 350 for 30 minutes until puffed, set and slightly brown around the edges.

I also made mayonnaise dipping sauces (calories not included in this reicpe):
*Garlic, chipotle-lime seasoning, salt and pepper in mayonnaise.
*Dill weed, lemon zest and lemon juice in mayonnaise.

  • We just loved these! I did add a dash of cayenne and some lemon juice to spice it up a bit. We ate them without mayonnaise sauce and really enjoyed them. A keeper! - 4/14/11

  • These are really good. I used frozen seasoning blend which contains chopped onion, red and green peppers. Do you think they would freeze well. I would like to try freezing them but every time I make them they just disappear. My husband could eat all of them in one sitting! - 11/3/09

  • This was very good. I used egg beaters instead of eggs and it worked well. I did make what I guess was a silly mistake - I used regular salmon steaks, not canned salmon. Mixing is a bit difficult with salmon steaks :-). - 7/22/09
