Easy Bean & Veggie Burritos

Introduction

A guiltless dinner favorite that's sure to please! A guiltless dinner favorite that's sure to please!

Ingredients

    1 15-ounce can black beans or pinto beans, rinsed and drained1 cup frozen corn1/2 green pepper, chopped1/2 cup salsa1 teaspoon chili powder1 dash hot sauce (to taste)4 (8-inch) whole wheat tortillas1/2 cup low-fat cheddar cheese, shreddednonfat plain yogurt, optional

Directions

1. Drain the beans and rinse well.

2. Place the drained beans in a small saucepan that has been sprayed with a non-stick spray. Mash beans with a fork, leaving some beans intact.

3. Add corn, green pepper, salsa, chili powder and hot sauce. Mix well. Heat on medium until bean mixture is hot.

4. Warm tortillas according to package directions.

5.Spread 1/4 of the bean mixture on a tortilla. Add 2 tablespoons of the cheese.

6.Garnish with yogurt, if desired.

7. Fold in both sides of tortilla, and then roll into a secure wrap.

8.Repeat with remaining bean mixture and tortillas.

Makes 4 servings (yogurt not included).

    Wrapping tortillas in plastic wrap for warming can cause transfer of minute petrochemicals to the food. Better to heat the tortillas over aluminum foil for about 30 seconds on top of the stove. - 10/24/08

    I made this for dinner tonight for Hubby, he said to rate it 5 stars, he loved it. I did use a little taco seasoning instead of chili powder and I added a tiny bit of onion. I made it with black beans. - 4/27/09

    These were great. Even my husband loved them and he is not a veggie and bean person at all! We had ours with brown rice with a spoonful of the burrito filling on top for some extra flavor. - 5/5/09

    I actually place my tortillas in the micro wave between two sheets of damn paper towels for 30 seconds each side (if doing 4 tortillas...and dont forget to place damp paper towel between each tortilla) I would also add some cumin to the beans for additional flavor w/o adding calories - 3/8/09

    My kids enjoy this. I skip the hot sauce add fresh cilantro. Also add jalapenos for the kids who love it hot. Some times I add black olives or other veggies to mix it up but corn, beans, and the cilantro & spices are a must. They also like left-over rice and fresh tomatoes in it occasionally. - 2/1/09

    It makes a nice mix, especially if you cook up some onion first. I would add more chili powder and some salt, though. Cumin would be good as well. - 7/14/08

    Just made this tonight- it was awesome!!!! Used refried ff beans, and flat out bread instead of a corn tortilla. Not sure but I think this cuts the calorie content. Thank you so much for sharing : ) - 2/3/09

    Wow, thanks! I had just about everything in the house anyway (except for some minor substitutions). Had red beans and tortilla wraps from when Publix had BOGO. I never drain my beans, so this was a bit wet, so I added 1/2 cup granulated TVP to the mix. Dinner was fast and practically FREE! - 4/28/09

  • Great! I cook beans from dried in the crockpot. I brown ground beef in another crockpot a la FlyLady, & use organic frozen corn. I add beef or chicken & other individualized items (onion, jalapenos, cumin, garlic powder, etc). I sometimes use rotel instead of salsa, since I add fresh onion &peppers. - 2/19/11

  • Very good, but why is this so high in calories? If you add each ingredient separately it is less than half. I guess i didn't use as much as called for. It's hard to add this to your daily nutrition plan if it isn't correct. :( Cut some sodium by rinsing corn as well. - 1/3/11

  • I'm not a vegetarian, but I first made this recipe when I didn't have any meat unfrozen. I chop onions & celery & cook them in a pan with a spray of olive oil, then add to bean & corn mix. This is a good base recipe; you can add, subtract ingredients at will, just change the recipe 4 nutrient info. - 1/1/11

  • We use corn tortillas almost every day! You can also boil and shred chicken and then re-cook it w/onions, tomato and garlic and add cilantro. This is a great way to enjoy burritos w/o all the calories! - 5/15/10

    i will definetely make this one comment on tortillas you can use a moistened paper towel between them to keep them from sticking and there has been no proof people that using plastic anything can give you cancer - 5/11/09

    I would substitute Tomaros Low Carb tortillas and this should be greaat. I'd likely add some hot peppers for that extra zing. My huusband's diabetic so I always look for lower carb options. - 10/24/08

    This is similar to the way we make bean burritos using refried beans. I never thought of adding the corn to the beans. Perhaps I'll try that. We also top the beans with finely chopped onion for a little extra punch. Yum.
