An easy, warming chili for parties or cold winter nights. Make double and freeze some for a night you don't want to cook. For a vegetarian version, eliminate the ground turkey and add more beans. Ingredients

Beans, pinto, 4 cup
Garlic, 6 cloves
Olive Oil, 3 tbsp
Chili powder, 6 tbsp
Cumin seed, 2 tbsp
Pepper, black, 2 tbsp
Salt, 2 tbsp
Canned Tomatoes, 2 can
Pepper, red or cayenne, 1.5 tbsp
Beans, black, 2 cup
Onions, raw, 2 cup, chopped
Turkey, Ground turkey, 93% lean, 8 oz
Tomato Paste, 1 can (6 oz)
Yellow Sweet Corn, Frozen, 1 cup kernels
Directions
Brown ground turkey in 2 tbsp of olive oil. Dice 2 medium onions (makes about 1 cup) and 6 cloves of garlic. Add to turkey and saute until soft. Add spices and stir. Add two large cans of tomatoes, crushed into smaller pieces, and all liquid. At same time, add 1 regular can each of black beans and pinto beans, including liquid. Add tomato paste and stir until completely mixed in. Add 1 cup of frozen corn kernels and stir. Cook for at least 45 minutes on medium heat, stirring occasionally. For best taste, cook at least 90 minutes. Can add chili powder, cayenne and/or cumin if spicier chili is desired.
If desired, serve with chopped onion, shredded Jack cheese, or no-fat sour cream (those calories not included in recipe). Can also serve over brown rice.
