Cheesy Potato Soup

Introduction

Good on a cold night with a salad on the side. Good on a cold night with a salad on the side.
Number of Servings: 20

Ingredients

    *Potato, raw, 6 medium chopped in to bite size pieces.

    Chicken Broth, 6 cup (one large can)

    Onions, raw, 2 cup, chopped (about 2 small ones will do.)

    Celery, raw, 2 cup, diced (a few nice size stalks)

    Bacon, about 1/2 a pound

    Carrots, raw, 1 cup, grated (I used the ones preshredded)

    Campbell's Cheddar Cheese Soup, one can

    Cream of Celery Soup, one can

    Cheddar Cheese, 2 cup, shredded (one package)

    Mrs. Dash seasonings to taste.

Directions

Cut the bacon up in to small pieces.

Start in a cold pan and cook till the fat renders out.

While the bacon is cooking cut up the onion and the celery.

When the bacon is done add in the onion and celery.

Cook for about 10 minutes or until the onion is just starting to get soft and cooked.

While the veggies are cooking wash and cut the potatoes up in to the bite size piece.

Add the potatoes, carrots, and chicken broth to the pan. Add Mrs. Dash do not be shy with the seasonings.

Bring to a boil and then let simmer until the potatoes are fork tender, about 30 minutes or so.

When the potatoes are cooked to fork tender add in the soups to thicken the broth and then the cheese. Heat until hot and steamy. At this time you want to check the seasonings to your taste.

Makes about 20 servings at 1 cup each.
