Watermelon & Cucumber Gazpacho

Introduction

Courtesy of Cat Cora and Epicurious. I tweaked a few things (left out celery, more cucumber and onion, no yellow pepper . ..didn't have any) but it was really very good. Made it and let chill in the fridge for a day or two. Even better!!

So good, my husband and I ate it all even though it really would be 4 appetizer sized servings.

Number of Servings: 2

Ingredients

    3 1/2 cups diced watermelon
    1 med-lg cucumber, diced
    1 med-lg red pepper, diced
    jalepeno pepper, diced (to taste)
    1 med red onion, diced
    1/4 cup finely chopped fresh mint
    3 tablespoons fresh lime juice
    2 tablespoons red wine vinegar
    salt to taste

Directions

Pure3 3 cups watermelon in blender until smooth. Transfer puree to large bowl. Add remaining watermelon and remaining ingredients. Stir to combine. Cover and refrigerate.

I let it sit over night it was even better!!
