2 Boneless, skinless chicken breasts
1 tbs olive oil
1-2 cups fresh mushrooms, Portabella is best
2 cups chicken broth
2 tbs. Balsamic Vinagar
1 clove garlic
2 slices Swiss cheese
1 cup cooked Brown rice
In a large skillet heat olive oil, saute mushrooms and garlic. Remove to a heat safe bowl. In same skillet brown chicken breasts. Remove to bowl with mushroom mixture. In same skillet add broth and vinegar. Bring to a boil, reduce heat and simmer until reduced by one third. Add chicken and juices back to skillet cover and cook until chicken is done (juices run clear). Top with mushrooms and Swiss cheese. Cover and cook until cheese melts. Serve over rice with the sauce as a gravy.
