Ingredients

1.75 oz. salmon fillet
3/4 tsp. lemon pepper
3/4 tsp. dried dill weed
1/4 tsp. salt
1/2 c. coarsely chopped sun-dried tomatoes
1 (2.25 oz) can sliced ripe balck olives, drained
2 oz. fat free crubled feta cheese
1/4 c. pine nuts, toasted
Directions
Place each salmon fillet on heavy duty foil. Sprinkle evenly with lemon pepper, dill and salt. Top with tomatoes, olives, feta cheese and pine nuts. Fold foil over fillets and roll up to seal. Place foil packet seam side up on a baking sheet.
Bake at 400 fir 18-20 min. or until fish flakes with a fork. Do not over cook!
Serves approx. 6.
