Quick and Simple Banana Bread

Introduction

I like this recipe because it is quick and simple and the bread comes out soooo good. You can add nuts if you like, I personally do not like them in bread so the #'s are calculated without them. Number of Servings: 24

Ingredients

    1 Cup Sugar
    1/3 Cup Light Margerine
    2 Eggs
    1 1/2 Cups Mashed Bananas (about 3 to 4 medium sized)
    1/3 Cup Water
    1 2/3 Cups Flour (NOT self rising)
    1 Teaspoon Baking Soda
    1/2 Teaspoon Salt
    1/4 Teaspoon Baking Powder

    1/2 Cups Chopped Nuts - if desired**

Directions

Heat Oven to 350. Grease Bottom ONLY of loaf pen with non stick cooking spray.

Mix sugar and margarine until creamy. Stir in eggs until well blended. Add mashed bananas and water - beat for 30 seconds. Stir in remaining ingredients (except nuts if adding in) until moistened. Add nuts.

Pour into loaf pan and bake according to below or when cake tester comes out clean:

8 inch loaf pan - 1 1/4 hour
9 inch loaf pan - 55 to 60 minutes

Cool for about 5 minutes. Carefully loosen sides and remove from pan - cool on wire rack. Slices easier when completely cooled.

Recipe Yeilds 24 servings - one slice per.
