Chicken and Fluffy Dumplings

Ingredients

16 oz chicken breast, skin and bones removed
Water
1 Tbsp dried minced onion
Salt and Pepper or Mrs. Dash to taste.
3 Tbsp Wondra Flour
1/3 cup water
3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1/3 cup 2% milk
Directions
Cook chicken, minced onion and spices till chicken is done and tender enough to be separated with a fork.
Add carrots and bring to a boil. Stir Wondra and water together to make a paste. Stir into chicken and broth.
Mix flour, baking powder and salt. Add milk and mix to a heavy wet dough.Take heaping teaspoons of dough and carefully float on top of gravy. Place lid on pot and allow to cook covered for 15 minutes. No peeking!
The recipe is adjusted for high altitude. You may need to increase baking powder up to twice as much.
Regular flour can be substituted for Wondra. Wondra decreases the chance of lumps.
I use a pressure cooker to cook the chicken so I am not sure how long it is necessary to cook the chicken in a regular pan.
