Ingredients

1 cups whole grain/brown rice
1 cups beef broth
1 TBS Canola Oil
1 pound of LOW FAT ground turkey or chicken
salt & pepper
1 large onion
2 cloves chopped garlic [or 2 tsp from jar type]
1 Bell Pepper [choice of color], finely chopped
2 tsp Worcestershire sauce
1 cup Tomato Sauce
1/8 tsp Cloves
1 tsp Ground Cumin
1/4 cup chopped Parsley
Directions
Prepare Rice in beef broth/per package directions [about 20 minutes]
Heat a large, deep skillet or Dutch Oven over medium high heat. Add oil & ground turkey & season with dash of salt and pepper. Brown meat, 2 or 3 minutes. Add onion, garlic, bell pepper, Worcestershire. Cook together 5 to 7 minutes, until veggies are just tender. Add tomato sauce, cloves, cumin and parsley. Bring mixture up to a bubble and reduce heat to low.
Combine cooked rice with meat mixture and serve with Spicy Chopped Salad with Tortillas and Taco Dressing, recipe follows. Reserve 1/2 of the turkey and rice and freeze for stuffed peppers for another meal.
