Turkey Bacon Breakfast Burritos

Ingredients 10 Slices TURKEY BACON, cut into 1/4-inch pieces 1/2 Cup green pepper, seeded and chopped 1/2 Cup onion, chopped 5 eggs 1/2 Cup skim milk 1/4 Teaspoon pepper 1 Cup reduced-fat Cheddar cheese, grated 10 8-inch flour tortillas As needed Salsa
Directions
1. In large non-stick skillet, over medium heat, cook bacon, green pepper and onion 12 to 15 minutes or until bacon is lightly browned, stirring frequently. Regulate heat to prevent sticking and burning; remove skillet from heat.
2. In small bowl combine eggs, milk and pepper. Pour egg mixture over bacon mixture. Return skillet to low heat for 2 to 3 minutes or until eggs are almost done; stirring frequently. Remove skillet from heat and stir in cheese.
3. Place 1/4 cup egg mixture on lower 1/3 of each tortilla. Roll tortilla and place in 9 X 13-inch microwave-safe dish; cover with plastic wrap. Cook in microwave oven at HIGH (100% power) 2 to 3 minutes or until burritos are hot.
4. To serve, drizzle salsa over burrito.
Makes 10 servings (1 slice turkey bacon each.)

This is a great idea, but really, turkey bacon is worse for you than regular bacon. It's loaded with sodium, nitrates, preservatives and food dyes. Better off using ham, or half of a leaner natural bacon and dicing that up. Or like one person did, turkey sausage. Stay away from turkey bacon! - 3/26/09

For those who do not like green peppers and onions, like me, try sliced black olives and a touch of garlic powder instead with the rest the same. This is aweome for for breakfast or dinner, and you can roll up some extras in zip-locks for later or the next day! Or freeze for 1 minute breakfast days. - 7/5/08

I liked it and found it very easy to make. But like all
recipes I tweeked this one also. I used 2 whole eggs and 3 egg whites, I also used fat free evaporated milk. Adds a lot of richness with NO EXTRA FAT. Try it the way I made it. You might like it, and your getting less calories & less fat. - 4/23/09

This was excellent! I did not follow the cooking instructions exactly. I cut down the amount of everything, didn't need 10 servings. I also cooked the bacon separate, warmed the tortillas separate in the microwave and assembled everything at the table, so each person could make to their liking. - 5/11/08

I love everything turkey yet I am considering what people are saying about it. U know u can buy organic no nitrate turkey bacon... That resolves all that. Then u dont have the saturated fat from regular bacon which is just as life threatening as nitrates.I think I saw it at whole foods. Ill have 2 c - 10/19/09

Nice. I do a similar dish, although it is basicall scrambled eggs with the ingredients mixed through. I occasionally also add 1 oz of grated cheddar cheese as well. Also, we tend to serve ours with wholewheat toast and it makes a fine hearty breakfast or even something different for lunch. Highl - 8/21/09

The one thing that I miss eating is my eggs bacon potatoes and toast for breakfast. This recipe filled that void. I made it this morning for breakfast. Of course their is too much so I will refrigate the mixture and have it for breakfast (or lunch or dinner another day). Thanks for the recipe. - 8/14/09

Made this for Sunday breakfast for hubby and two teen boys. Everyone loved it. They ate two servings each, so we had just a couple burritos left over. I plan to make this again soon and put single servings in the freezer for the teens to have for weekday breakfasts or after school snacks. - 11/11/12

We tried this recipe as dinner and loved it! Good healthy alternative for BLT quick meal. I used whole wheat tortillas and the burritos were really good. My husband can't eat green peppers so we substituted okra and this provided that little bit of spicy tang that peppers give. Great recipe!! - 5/4/11
