Mediterranean Stew

Introduction

So easy and healthy! So easy and healthy!
Number of Servings: 6

Ingredients

    2 - Zucchinis (about 3 cups), sliced thin
    1/4 - Eggplant (about 2 cups), cubed
    1 - Onion (about 2 cups), chopped
    1 - Green Pepper (about 2 cups), chopped
    3 - Tomatoes (about 3 cups), chopped
    1 cup - Carrots, strips
    1 can - Garbanzo Beans (cooked/drained)
    1 can - Hearts of Palm Artichoke Hearts (drained)
    2 TBSP - Extra Virgin Olive Oil
    1 TBSP - Oregano (fresh or ground)
    Salt, Pepper, & Red Pepper Flakes to taste


Directions

1. Place all ingredients into a cooking pot on medium/high heat with a lid.
2. Stir every 3-5 minutes and lower heat as necessary not to overcook.
3. Cooking time may vary, but it is done once the zucchini is tender.
4. Enjoy! This can be paired with rice or orzo noodles.
