Turkey - Vegetable Sloppy Joes

Introduction

Number of Servings: 8

Ingredients

    1 pound grount turkey, extra lean
    1 cup chopped onion
    1 garlic clove, minced
    1/2 cup chopped green bell pepper
    1 (14.5oz) can diced tomatoes, no salt added
    1/4 cup tomato paste
    1 tbl prepared mustard
    1 tsp chili powder
    3/4 tsp ground cumin
    1/2 tsp salt
    1/2 tsp ground black pepper

Directions

Cook turkey, onion, and garlic in a large nonstick skillet over medium-high heat until turkey is browned, stirring to crumble. Stir in bell pepper and next 7 ingredients. Bring to a boil; cover, reduce heat, and simmer 10 minutes.

Serve with whole-wheat buns. Serving size: 1/2 cup. Serves 8.
