Potatoes and other yummy stuff cooked on a round pizza pan forms a disc of deliciousness! Adapted from The Best of Bridge for lower fat. Ingredients

5 potatoes (unpeeled), thinly sliced
1 onion, thinly sliced
2 tbsp (25 mL) olive oil
Half sweet red pepper, slivered
2 cloves garlic, minced
1 tbsp (15 mL) minced fresh parsley
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) each dried rosemary and pepper
1/2 cup (125 mL) shredded smoked gouda (or gruyere)
Directions
In bowl, toss together potatoes, onion and 1.5 Tbsp oil. Stir in red pepper, garlic, parsley, salt, rosemary and pepper.
Brush 12-inch (30 cm) pizza pan with remaining oil; spread with potato mixture. Bake in 450°F (230°F) oven for 15 minutes or until tender, brown and crisp. Sprinkle with cheese; bake for 5 to 8 minutes longer or until golden brown. Cut with a pizza slicer into 6 servings.
