2 tsps olive oil
8 chicken thighs, skin and bones removed
1 large mango, in 1cm cubes
1 medium onion, chopped
1 454g can chopped tomatoes
1/2 cup coconut milk
1/2 cup natural yogurt
Serve on a bed of brown or white rice and with a raita, made with 1/2 cup natural yogurt, 1 tsp dried mint, 2 finely chopped cloves garlic and a pinch of chilli powder, and a mixed salad, seasoned with lemon juice, salt and pepper.
