Mango Curry Chicken

Ingredients

    2 tsps olive oil
    8 chicken thighs, skin and bones removed
    1 large mango, in 1cm cubes
    1 medium onion, chopped
    1 454g can chopped tomatoes
    1/2 cup coconut milk
    1/2 cup natural yogurt

Directions

Heat oil in non-stick saute pan/wok till hot. Fry chicken pieces till browning; add onions and stir inh curry powder. Cook on a medium heat till onions are soft. Add mango, tomatoes and coconut milk and cook for 25 minutes. Stir in yogurt until heated through.
Serve on a bed of brown or white rice and with a raita, made with 1/2 cup natural yogurt, 1 tsp dried mint, 2 finely chopped cloves garlic and a pinch of chilli powder, and a mixed salad, seasoned with lemon juice, salt and pepper.

    I just made this on Friday for a Date Dinner with my boyfriend and he and I Loved it! I didn't have the ingredients for the rice, but made coconut rice with the leftover coconut milk from and added some cinnamon to it. Absolutely delicious! - 11/24/08

    I *loved* this recipe! it was delicious. Taste really good with vanilla yogurt too! I wasn't a big fan of the rice though, so I made cocnut rice instead (tasted really good). So easy too! I cook this often now :) - 10/28/08

    Very easy to make and tasted so deliscious. I too added about 2 tbsp of curry powder, but it depends how spicy you like it. Very very yummy. Cant wait to make it again! - 7/30/08

  • I expected this to have a little more flavor, so I will probably use more mango and curry powder next time. Very easy to make, however, and still satisfied my craving for homemade Indian cuisine. - 5/17/13

  • Amazing dish was full of flavor. doesnt say how much curry powder to use i put 2 heaped tablespoons of medium curry powder in to make it nice and spicey - 3/19/12
