Low-Fat Everything Meatloaf

Submitted by: CELINEWC

Introduction

I threw this together with what we had in the fridge the other day. It came out really moist and tasty. I served it with roasted green beans and quinoa cooked in chicken broth w/ a little olive oil. Directions

1. On a cookie sheet, mix veggies (onions, zucchini, squash, bell pepper) with olive oil and roast in oven at 400 degree until desired doneness. I like my onions sweet, so I cooked until caramelization-15 minutes. I also used the shredder in my food process and ran all of the veggies through it rather than chopping them.

2. In a bowl mix -
ground beef, bread crumbs, egg, thyme, parsley, garlic, 1/2 of ketchup, worcestershire sauce, barbecue sauce

3. Combine with roasted veggies - mix well

4. Form loaf on sheet pan lined with parchment paper

5. Mix balsamic vinegar, and tomato paste. Spread on top of loaf for glaze.

6. Bake at 425 degrees for 1 hour. Makes 8 servings.
