Introduction

Mix it up and serve as a pepper stuffing or roll up in a tortilla. Vary extra spices according to taste. I rinse the beans before added to lower the sodium content. Ingredients

    1 lb Ground Lean Turkey
    1 Boil-In-Bag Brown Rice
    1 can Black Beans, rinsed
    1 Medium Onion, Chopped
    1 clove Garlic, minced
    1 Jalapeno, chopped

Directions

Makes 8 1-cup servings

In non-stick skillet, saute onions and garlic until onion starts to soften. Add turkey and cook through. Drain and put in large bowl. Cook rice according to package directions. Place cooked rice in bowl with turkey. Drain black beans and add to turkey. Add chopped jalepeno and stir.
Add chili powder, Mrs. Dash, whatever seasonings you want according to how you're going to serve it. I've mixed in picante sauce or habanero sauce and served it with whole wheat tortillas. Yummy!!
