Dairy Free Lasagna

Introduction

Since finding out that I have IBS and thus dairy intolerant, I have started searching for new products and modifying the recipes that my family loves. Ingredients

    10 oz Follow Your Heart Vegan Gourmet Cheese Alternative Mozzarella
    1 26 oz can Hunt's Zesty & Spicy Spaghetti Sauce
    1 6 oz can tomato paste
    1 28 oz can petite diced tomatoes
    2 medium onions, chopped
    5 cloves garlic, chopped
    2/3 cup frozen mixed bell pepper slices
    1 1/2 lbs super lean ground beef (less than 5% fat content)
    2/3 of a 13.25 oz box Ronzoni Healthy Harvest Whole Wheat Blend Pasta - Lasagna (about 15 noodles)
    1/2 tsp black pepper
    1/4 tsp cayenne pepper
    1 tbs basil, dried
    1/2 tbs cilantro, dried
    1 tsp sugar
    Feel free to add any other seasonings that you would like, however this will alter the nutritional information somewhat.

Directions

Preheat oven to 350.
In a large non-stick frying pan saute the onions, garlic and ground beef until the meat is browned and the onions are soft. (You might have to add a little water in the beginning to get it started.)
Add the bell peppers, tomato paste, diced tomatoes, all of the herbs and seasonings, and the spaghetti sauce.
Bring the sauce mixture to a boil and then reduce heat and simmer for at least 15 minutes to thicken.
Shred the dairy free mozzarella cheese.
In a 9 x 13 baking pan place a layer of meat sauce.
Add a layer of whole wheat lasagna noodles.
Add a layer of meat sauce.
Add a layer of dairy free mozzarella cheese.
Add a layer of whole wheat lasagna noodles and continue layering as above ending with a layer of dairy free mozzarella cheese.
Cover with foil and bake for 45 minutes.
Remove foil and continue baking for another 10 minutes or until hot and bubbly.
If you would like the dairy free mozzarella cheese on the top to be browned place under the broiler for a few minutes.
Let stand at least 10 minutes before cutting.
