Beth's Awesome Tortilla Pizzas

Ingredients

    4 Low Carb Whole Wheat Tortillas
    1/2 can Tomato Paste
    2-4 tbsp water
    1 tbsp Italian Seasoning
    4 oz Reduced Fat Feta Cheese
    4 tsp Parmesean Cheese
    4 Sun Dried Tomatoes
    1 Roma Tomato
    1cup Cilantro or Spinach

Directions

As with any pizza...make it your own by adding what you like. I have had this with mushrooms one time and with black olives another

I mix a few tbsp of tomato paste (depends on how many pizzas you are making I always make three - two for the driver, one for me) with the Italian seasoning and a little water to thin it out.

i chop the tomato, cilantro (or spinach) and sun dried tomatoes (I use one roma for all three and one sundried per pizza)

Place the tortilla on the George Foreman grill. or in a frying pan. Spoon on Tomato paste. Place veges on top, sprinkle with parmesan, and I use about 1 oz feta for each pizza.. which goes on top. They are ready in five to ten minutes, when toppings are heated..

Absolutely delicious!
