Peanut Chicken

Introduction

Ingredients

    1 pound chicken breast fillets
    2 Tbsp reduced-fat peanut butter
    1 tsp low-sodium soy sauce
    1/8-1/4 cup water (thin/thicken sauce to taste)
    1 tsp sesame seeds

Directions

Preheat oven to 350F. Coat a baking pan w/ olive oil cooking spray.
Season chicken lightly with salt & pepper and place in baking dish; set aside.
Combine peanut butter, soy sauce & water in bowl and microwave on high 30 seconds. Stir until smooth & well mixed. Spoon mixture over the chicken, then sprinkle with sesame seeds.
Bake for 20-30 minutes or until the chicken is no longer pink inside.
