Pasta Alfredo w/Stir Fry Veggies

Introduction

You can actually saute any veggies you like it will just change the calorie count! You can actually saute any veggies you like it will just change the calorie count!
Number of Servings: 6

Ingredients

    1 eggplant
    1 red pepper
    1/4 cup olive oil
    2 cups low sodium vegetable broth
    1/2 onion
    6 garlic cloves
    1 portabello mushroom
    4 shitake mushrooms
    3/5 tofu sections
    1 tsp. black pepper

Directions

Makes approximately 6 - 1 cup servings!

Peel, cut and saute eggplant, red pepper, onion, 4 garlic cloves, portabello mushroom, shitake mushrooms in 1/4 C. olive oil!

After everything is almost cooked simmer in 1 cup of vegetable broth.

Blend tofu with 1 cup of vegetable broth, then heat in a pan.

Boil pasta & drain add sauce and sauted vegetables! Eat and Enjoy!
